Baked Cherry Pecan Oatmeal

Ingredients
In a large bowl combine:2 1/4 cups Quick Cooking Oatmeal1/2 cup Packed Brown Sugar1/2 teasp. Salt1/2 cup Dried Cherries, chopped1/2 cup Pecans, choppedIn a medium size bowl blend:3 cups Fat Free milk3 large Eggs, slightly beaten1 teasp. Vanilla Extract1/4 teasp. Almond Extract
Directions
1. Heat oven to 350 degrees.
2. Spray an 8 inch square baking pan with cooking spray.
3. Add liquid ingredients to the dry ingredients, mix thouroughly.
4. Pour into prepared baking pan.
5. Bake for 30 to 35 minutes or till knife inserted near center comes out clean.
6. Cool for 10 minutes.
7. Serve with vanilla yogurt or milk.
