Meal - Sized Vegetarian Caesar Salad

5 oz light silken tofu (Mori-Nu, etc) 1/4 tsp. maple syrup (optional) 2 Tbs. Nutritional Yeast1 Tbs. fresh lemon juice 1/2 tsp lemon zest1 Tbs. apple cider vinegar 1 tbsp. Dijon mustard 3 cloves garlic, minced 1 tsp. coarse-ground black pepper 1 large head romaine lettuce, washed, dried and chopped
Place tofu, syrup, nutritional yeast, lemon juice, lemon zest, vinegar, mustard, and garlic in blender or food processor, and process. Season generously with pepper.
To assemble salad, place lettuce in salad bowl, and pour dressing overtop. Toss well to coat leaves evenly.
