Ricotta and Honey Pancakes

Ingredients
PANCAKES8 plain crepes240 grams fat free ricotta cheese1 tblspn lemon juice1 tsp lemon peel1 tblspn honey40 grams raisins (sultanas)2 tblsp flaked almondsSAUCE1/2 cup orange juice1/2 cup lemon juice1 tblspn honey1 tsp ground cinnamon1 tsp cornstarch (cornflour)2 tsp water
Directions
Combine all pancake ingredients except the crepes and mix well. Spoon @ 2 tblspn of the cheese mixture into the centre of each crepe, roll each into a cone shape.
Combine all the sauce ingredients in a saucepan, bring to the boil stirring, simmer for @ 1 minute.
Serve warm sauce over pancakes.
