Cassie's Mommy's Apple & Cinnamon Steel Cut Oats

1 C. Organic Steel Cut Oats1 1/2 C. Water1 1/2 C. Unsweetened Apple JuicePinch of Salt1 tsp. Cinnamon (or to taste)
THE NIGHT BEFORE fill a pot with 1 C of water and oats. Leave oats soak until morning (this cuts down the cooking time tremendously!)
When you are ready for breakfast, add the remaining 1/2 C. of water and 1 1/2 C. of Apple Juice, Cinnamon and pinch of Salt. Let cook for 10 to 15 minutes.
Some options include adding warm milk, nuts (pecans and walnuts are great!, bluberries or maple syrup.
TIP make a batch for the week -- it keeps int he fridge well and just needs to be warmed with a touch of milk, water or spple juice.
