Ingredients
6 medium eggs1/3 cup shredded cheddar cheese1/2 cup black beans1 medium tomato, chopped1/4 cup chopped onions2 tbsp salsa1 tsp Mrs. Dashsalt pepper
Directions
Crack the eggs into a large bowl. Beat with a whisk until fluffy. Add Mrs. Dash, salt and pepper to taste.
In a medium skillet on medium heat, cook the chopped onions until soft. Add the beans. Cook until well heated. Add the eggs, tomatoes, cheese and salsa. Cook until well done about 3-4 minutes.
Makes 3 servings.

    substutite the egg for 12 ounce package of firm tofu crumbled with a tablespoon of turmeric
    add more vegetables leave out cheese the fat drops the protein still there still satisifing - 8/26/11
