Kung Pao Chicken - Cooking Light

Ingredients
2 boneless, skinless chicken breasts3 Tbsp soy sauce1/4 cup plust 1 1/2 tsp cornstarch, divided1/4 tsp salt2 Tbsp canol oil1 1/2 Tbsp honey2 tsp rice vinegar1 tsp sambal oelek1clove garlic
Directions
Cut chicken into bite-sized pieces and marinate at room temperature in 1Tbsp soy sauce for 30 minutes. Remove chicken from marinade, sprinkle with salt, and dredge in 1/4 cup cornstarch. Cook chicken in batches in canola oil until brown and cooked through. Combine remaining 1 1/2 tsp cornstarch, 2 Tbsp soy sauce, honey, vinegar, and sambal oelek in a microwave-safe bowl. Microwave on hight, 1 1/2 minutes or until slightly thick. Stir in garlic. Toss chicken in sauce.
