Insanely Low-Cal Splenda Meringues

Ingredients
2 Egg Whites (or 4 tablespoons)1/2 cup Splenda 1/4 teaspoon Cream of Tartar (or a teaspoon of lemon juice)1/8 teaspoon Salt1 teaspoon VanillaFood Colouring (optional)
Directions
1. Preheat oven to 300 degrees. Spray or grease a cookie sheet.

2. Combine egg whites, cream of tartar (or lemon juice), and salt in a medium bowl. Beat until foamy, with no liquid at bottom.

3. Add splenda while beating until mixture is glossy and stand up when left alone. Fold in vanilla extract. Add food colouring if you like.

4. Spoon about a tablespoon ontp cookie sheet and bake for about 20 minutes, or until light brown.

    I made these, but I allowed for some substitutions. I used stevia extract and erythritol to sweeten them and omitted the food coloring and vanilla extract in favor of some mint extract. These were good, but not very satisfying so I ate a bunch, but I did so without any guilt :) - 11/30/10

    I made half a batch of these as the recipe states, and half a batch with some added peppermint. The regular one tastes like straight Splenda, my modified one tastes like peppermint flavored Splenda. - 1/7/10

    I made these and found them funny tasting. So I tried again and added cocoa to make them chocolately - not super great. I made them with sugar instead of Splenda and they turned out much better (although they had more calories). I probably won't make them with Splenda again - too odd tasting - 3/1/09
