Grandma’s Apple Cake GF - In Flora's Kitchen

1/4 cup canola or vegetable oil1 cup granulated sugar1 teaspoon cinnamon1 teaspoon baking soda1 cup white rice flour1/2 cup cornstarch1 egg (or 1/4 cup applesauce + 1 tsp baking powder)2 cups diced, peeled apples(egg calculated in nutrition reported)
Grease an 8×8 cake pan (or similar size baking dish) and preheat oven to 350.
2. In a large bowl combine the oil and sugar. Stir with a wooden spoon until well blended. Add the cinnamon,
baking soda, rice flour, cornstarch and egg (or apple-sauce + b powder), stir well. The mixture will be very dry.
Stir in the apples.
3. Pour batter into prepared pan and bake for 35- 40 minutes or until toothpick inserted in center tests clean. Allow to cool before slicing.
Serving Size: Makes 8 2x2 squares
