All Natural Oatmeal Cookies

Dry Ingredients:1 c organic whole wheat flour (add more if recipe is to wet)1.5 c large rolled oats (or small oats)1/2 tsp baking soda1/2 tsp baking powder1/2 tsp salt1 tbsp cinnamon (to desired taste)1/2 tsp nutmeg (to desired taste)Wet Ingredients:1/2 c honey1/2 c oil or combo of oil and all natural applesauce (suggested corn, vegetable, grapeseed or olive) - I've used both vegetable and olive oil in seperate batches and both were good. 1 tbsp molasses1 extra large egg (beat w/1 tbsp water)1 tsp vanillaOptional: (one or all of the following - add more oil, an egg, or additional applesauce if mix is to dry after adding optional items).1/2 c raisins1/2 c walnuts1/2 c peanut butter1/2 c dried cranberries1/2 c dark chocolate chips
Preheat oven to 335 degrees
Mix dry ingredients in large bowl
Mix wet ingredients in small bowl
Mix the wet with the dry. Add your optional item(s).
Chill in fridge for 20 min.
Drop by teaspoonfuls onto cookie sheet (lined w/parchment paper works great)
Press down with fork if desired or leave in ball form
Bake 12-15 min.
Cool and eat!
