Vegan Zuppa Toscana

Ingredients
2 cups potatoes sliced thinly2 cups kale, chopped1 onion diced 4 oz of Gimme Lean Sausage, browned1 cup soy milk, unsweetened3 cups vegetable, or No-Chicken brothsalt/pepper/garlic powder/red chili flakes/oregano to taste
Directions
Brown the Gimme Lean in a frying pan. Saute onion in broth, add potatoes and rest of broth. Let cook until potatoes soften. Add spices, kale, sausage, and soy milk cook until kale wilts and flavors combine.
