CAM's Not Fried Rice

2 c. brown rice, cooked3 Tsp. Egg Replacer disolved in 3 TBS warm water2 carrots, chopped1 celery stalk, chopped1 small onion, chopped1/2 c. frozen peas1 c. bean sprouts fresh1 can mushrooms no salt added2 tbs soy sauce, low soiumwater (as needed)
Cook the rice according to directions on package.
Over a wok heated to high heat, add the carrots, celery, and onion. Stir fry adding water as needed until the veggies are tender-crisp.
Add the egg replacer disolved in warm water. Stir and heat through.
Add the bean sprouts, mushrooms and peas. Add the rice and soy sauce.
Mix to combine. Heat through.
Use vegetable oil spray or additional water to keep from sticking.
Makes 4 servings about 1 cup each.
