Sweet Potato (or Yam) - Apple Bake

Ingredients
2 med-lrg Sweet potatoes, raw, peeled, thinly sliced1 lrg Gala Apple (or 2 medium) (or use your favorite apple)2/3 apple cider (or apple juice)2 Tblsp cornstarch3 Tblsp water1/4 cup coconut sugar1/2 tsp ground cinnimon1/4 cup Wheat GermCooking Spray
Directions
Preheat oven to 375 degrees F. Spray an 8" x 8" baking dish with cooking spray; set aside.
Peel both sweet potatoes (or yams) and apples. Core apples. Thinly slice the sweet potatoes/yams and apples. Arrange potato slices and apple slices in alternate layers. Set aside.
Place cornstarch and water in measuring cup and blend until cornstarch is disolved.
In a small saucepan, heat apple cider (or juice) over medium heat until it beings to boil. Once cider/juice is boiling, stir in cornstarch/water mixture. Stir while it is cooking. Cook until it is thickened. Add coconut sugar and cinnamon to thickened cider/juice mixture. Pour this over the sweet potato/yam-apple mixture. Distribute wheat germ over sweet potato/yam-apple mixture.
Bake covered for 30 minutes (or until potatos/apples are fork tender). Uncover and bake for an additional 15 minutes.
