Cabbage Rolls

1 small head of green cabbage, cored3 c cooked brown rice16 oz lean ground beef or turkey (nutrition calculated with beef)4 c salt-free tomato juice1 small onion, chopped
Bring a large pot of salted water to a boil. Place entire head of cabbage in the pot, and as the leaves soften, pull them away from the head. Cook until all leaves are separated and place them in a colander. Cut thick vein off of leaves, without cutting through the leaf. Chop any leaves that are smaller than 6" in diameter.
Saute onions in cooking spray until soft. Add ground turkey or beef and cook through. Drain if necessary.
Combine meat and onion mixture with brown rice and chopped cabbage. Season with garlic powder, onion powder, and salt-free seasonings as desired.
Scoop mixture into cabbage leaves and fold ends over. Place folded side down in a casserole dish. Cover with tomato juice. Cover and bake at 300 degrees for 2-3 hours or as long as desired.
Serving Size: Makes 15 cabbage rolls
