Crust:.5 c graham cracker crumbs2 tbsp sugar2 tbsp margarine (melted)Filling:2 packages (8 oz each) fat free cream cheese22 packets of splenda no calorie sweetener2 eggs1 tsp vanilla
Preheat oven to 350 degrees. Line cupcake pan with foil cupcake tins.
Mix crust ingredients and press into the bottom of the cupcake tins.
Mix the filling ingredients until smooth. Evenly distribute among the cupcakes. Bake for about 15 minutes.
Makes 12 mini cheesecakes. I topped some with sugar free strawberry topping, some with sugar free caramel topping, and some with sugar free chocolate syrup. These calories are not included in the count for this recipe.
