Basil, 20 leaves (remove) Cilantro, raw, 1 tbsp (remove) Lemon grass (citronella), fresh, 3 tbsp (remove) Shallots, 1 tbsp chopped (remove) Garlic, 3 cloves (remove) *Curry Paste, Mae Ploy Red 114gm Can (1Tbsp/15gm/8Servings Per Can), 1 tbsp (remove) Sake, 4 fl oz (remove) Lime Juice, 2 fl oz (remove) *Homemade vegetable stock, 2 cup (remove) *Mussels, 32 oz (remove)
In a large (6-quart) pot over medium-low heat, combine cilantro, basil, lemon grass, shallots, garlic, curry paste. Stir until leaves wilt( bout 5 mins). dd sake, lemon juice and stock. Bring to a boil, then reduce heat to low. Simmer for 30 minutes, stirring occasionally.
Strain broth into another large pot. Add mussels and kaffir lime leaf. Cover, and place over high heat. Cook until mussels open, about 5 minutes.
