Quinoa Turkey Egg Casserole

Ingredients
Almond Milk, Unsweetened Original, 24 Spinach, fresh, 2 cup choppedOnion, raw, 1 large choppedThyme, ground, 2 tbspBasil, ground 2 tbspMushrooms, fresh, 3 cups, choppedWhole Grain Quinoa, 1.5 cup dryGround turkey, 93% lean, 16 oz egg whites, 18 large or 2.5 cupsEgg, 6 large Garlic, 4 clove Salt, 1 tsp Pepper, black, 1 tbsp Additional spices maybe added for flavor...I love adding hot sauces and red pepper flakes
Directions

rinse and layer quinoa on bottom of lightly oiled 9x16 baking pan. Brown turkey, add spices for taste. layer on top of quinoa. mix eggs, veggies, and spices. put on top. Cover with foil,Bake at 350 for 40-45 min, until cooked through.
