Lime Couscous Salad

Ingredients
*Couscous (dry), 3 cup Red Ripe Tomatoes, 1 cup, chopped or sliced Purple Onions, raw, 1 cup, chopped Black Olives, canned (2 small cans)Lime Juice, 2 lime yields Zest of 2 limesfresh cilantro, chopped 2 bunches
Directions
Boil 3 cups of water and remove from heat. Add 3 cups of couscous, and stir quickly. Allow to sit for 4 to 5 minutes until all liquid is absorbed. Add remaining ingredients and stir with fork until fluffy. Refrigerate until ready to serve.


Makes 12 one cup servings. Delicious with nearly any entree' but complements grilled salmon and chicken wonderfully.
