Roasted Red Peppers with/Quinoa

2 Red Peppers 1/3 cup dry Quinoa (to be cooked) 1 chopped spear of celery 1/2 of a chopped medium onion 7 ounces of diced marinated red peppers (or 1/2 can of diced canned tomatoes) 1/2 cup part skim mozzarella cheese 1 chopped jalapeno seasoning salt (to taste)
1. Cook the quinoa according to package directions
2. Saute the celery, onion, and jalapeno in 1 tbs of oil or a 1/4 cup of water.
3. Mix all ingredients
4. Bake in a 400 degree oven for 20 -30 min (or until the peppers are tender)
Serving Size: Makes 2-4 servings (I'd eat the whole pepper, so two 1/2s)
