Scrambled Zulom Eggs (Spicy scrambled egg canape)

1 large Egg 1 large Egg White1 tbsp Diced, jarred Jalapeņo2 tbsp Olive-oil Mayonnaise with cracked pepper1 oz Shredded Cheddar Cheese18 (count) Triscuit, hint of salt Sriracha chili sauce
Combine the eggs and Jalapeņo, scramble and cook over medium-high heat. Chop into fine pieces as it cooks.
Scoop Mayonnaise into a piping bag (or, a sandwich bag with one corner cut off), and pipe a spiral of mayonnaise onto each of the 18 crackers.
When the eggs are cooked, Place about 1tsp on each cracker. Then sprinkle the cheese in even portions over each cracker. Finally, add a single drop of Sriracha to each, and serve.
Serving Size: makes two nine-cracker servings
