Buckwheat Waffles Based on a Theme by Paganini

Ingredients
2 c. Arrowhead Mills organic buckwheat flour1 c. bread flour4 t. baking powder1 1/2 t. baking soda4 T. granulated sugar1 t. salt6 large eggs3 c. buttermilk1 c. unsalted butter, melted and cooled
Directions
1. Heat your waffle iron (preferably non-stick)
2. Combine all the dry ingredients in a medium or larger bowl.
3. In a large bowl, beat the eggs until they are fluffy. Add the buttermilk and butter, mixing well.
4. Stir in your dry ingredients until barely blended with the wet ones.
5. Pour batter onto waffle iron, and bake about 5 minutes each (until steaming stops).
6. Serve immediately with whatever you like on waffles, saving a few for snacking later in the day or quick meals on the fly.
