Vegetable Biryani

2 tsp Olive Oil1 medium onion, chopped1 medium Sweet Potato, cubed1 cup frozen peas1 medium tomato, chopped3 cup cooked biryani rice1/2 pack, Shan Biryani Masala Mix1/2 cup water1/4 cup plain yogurt, 3% M.F. 1 tsp minced garlic
Prepare 3 cups basmati rice.
Heat oil in saucepan, sauté onions over med-high heat for 5 minutes or until onion is translucent.
Add potato and garlic and stir fry for 10 minutes.
Add peas, the masala mix, water, and yogurt. Stir well. Bring to a boil and let boil for 5 minutes or until potatoes are tender.
If there is too much liquid in the vegetables drain the mixture.
Add cooked rice to vegetable mixture and mix together.
Serving Size: Makes 6 generous servings
