Turkey Stuffing: Turkey Sausage/Apple

9 slices of whole wheat bread, cubed and dried in advance (or bake at 350 to lightly toast)3 links turkey italian sausage, casings removed3 medium stalks celery, chopped1 cup chopped onions3/4 cup cored/chopped apples (leave skins on)1 Tbsp dried sage2 Tbsp fresh parsley, chopped1 tsp dried thyme2 1/4 cups low sodium, fat free chicken broth1/3 cup eggbeaters (or 3 egg whites)dash saltcouple dashes pepper
Saute sausage, breaking up as it cooks. Drain in a colander to remove any fat and return to skillet. Stir in celery, onion, and apple. Saute till tender.
In large bowl, stir bread cubes, sausage mix, sage, parsley and thyme. Pour broth and eggbeaters over mix and toss to coat. Season with salt and pepper.
Stuff into turkey and cook with bird if desired, or place in 9x9 casserole disk and bake until browned on top, about 45 minutes.
