Healthy Indulgences Chocolate Cupcakes

1 15oz can Black Beans5 Large eggs1 T. pure vanilla extract1/2 tsp sea salt6 T unsalted butter3/4 c. erythriol + 1/2 tsp pur stevia extract OR 1 1/4 cup Splenda6 T unsweetened cocoa powder1/2 tsp baking soda
Preheat oven to 325.
Drain & rinse beans. Place beans, 3 eggs, vanilla and stevia (if using) in a blender and blend on high until beans are completely liquefied.
Whisk together cocoa powder, baking soda, and baking powder.
Beat butter with sweetner until light and fluffy. Add remaining two eggs, beating for a minute after each addition. Pour been batter into egg mixture and mix. Finally stir in cocoa power and beat on high for one minute. Pour into cupcakes. Bake 40 - 45 minutes
Serving Size: Makes 12 cupcakes or a 9" cake
