Vegetarian Slow Cooker Onion Soup

2 Tbsp Olive Oil5 Large Onions (Vidalias make a very sweet soup... too sweet for us!)8 Cups Vegetable StockPepper to taste
Spread the oil in the bottom of slow cooker, add onions, cover and cook on low for 8-10 hours or longer, until onions are very soft and carmelized.
Add the stock, and season with pepper to taste. Cover and cook on high for 30 minutes.
