1/2 Cup butter (1 stick) 1 Cup sugar 1 egg 11/2 Cups all-purpose flour 11/2 tsp. baking soda 1 tsp. CINNAMON 1/2 tsp. GROUND NUTMEG 1/4 tsp. GROUND CLOVES 1/2 tsp. salt 11/4 Cups unsweetened applesauce 1/2 tsp. PURE VANILLA EXTRACT 1/2 Cup raisins 1/2 Cup chopped walnuts
Preheat oven to 350°. Grease and flour a 9x5 loaf pan and set aside. Cream together the butter and sugar until fluffy. Beat in the egg. In a separate bowl, stir together the flour, baking soda, CINNAMON, NUTMEG, CLOVES and salt. Gradually add to the creamed mixture. Beat in the applesauce and VANILLA. Fold in the raisins and walnuts. Pour into the loaf pan and bake at 350° for 60-70 minutes, until a toothpick inserted in the center comes out clean. Cool 10 minutes in the pan and then remove, let cool, slice and serve.
