Chicken, Cheddar and Broccoli Soup

Ingredients
2 tbsp. unsalted butter1 med. onion, chopped12 oz. chicken breast, no skin4-6 cloves garlic, choppedS & P4 cups low sod. chicken broth4 cups fresh broccoli, chopped1/2 cup all purpose flour1 1/2 cups 2% milk8 oz. 2% cheddar cheese1 tbsp. Emeril's Essence
Directions
Melt butter over medium heat. Add onion and garlic, cook until soft.
Add broth, broccoli, S & P. Bring to a boil.
Meanwhile, brown the chicken in a non-stick pan. Season chicken to taste and add to soup when completely browned.
Whisk flour into warmed milk intil dissolved. Sitr into soup and continue stirring until thickened Reduce heat. Stir in cheese. Heat until melted and heated through.
Serve with Essence sprinkled on top.
