1c. cooked pinto beans1/2 c. diced onion1/4 c. diced celery1/2 c. diced carrots1/4 c. diced sweet red pepper1/2 c. jalapeno, seeded and chopped fine1T. minced garlic.5 c. low sodium chicken broth.5 T ground cumin.25 t. ground cayanne2 t. coconut oil1 c brown rice (cooked)
Heat skillet or small dutch oven to medium, heat coconut oil then add onion, celery, carrots, and red pepper saute untill onion is tender, add garlic, jalapeno and spices stir together.
Add beans, rice and chicken broth, stir, cover, reduce heat to low and simmer for 20 min.
