Mom's Chicken Vegetable Soup in crock pot

1 chicken (about 4 pounds) stewed in 8 cups of water2 c. chopped celery1 c. chopped onion2 c. corn, frozen or canned2 c. peas, frozen2 c. green beans, frozen2 c. carrots, fresh, chopped12 dry medium egg noodles2 tsp. poultry seasoning2 tsp. salt2 tbsp. dried parsley1 tsp. black pepper
Stew chicken in 8 c. water for 6 hours on low in crock pot or until meat falls off bones. Remove chicken and remove bones. Set meat aside. Skim broth and return broth to crock pot, add veggies and seasoning. Cook 2 hours on low or 1 hour on high or until veggies are tender but not mushy. Add noodles and water, if needed to make 16 cups, cooking until noodles are almost done. Add chicken and cook until heated through and noodles are done. NOTE: the longer it cooks, the better it is. But don't add noodles if you're going to cook it longer. They'll get mushy. Add salt, pepper, and poultry seasoning to taste as it cooks. Add water if needed to make 16 cups.
