Apple Cinnamon muffins made from Sparkpeople's multi purpose baking mix

2 Cups Bisquick or Sparkpeople mix2 teaspoons of Cinnamon1/8 to 1/4 Cup Sugar Blend ( Truvia or Splenda )3/4 to 1 Cup of Apple's peeled, corded and finely diced2 Egg white's2/3 Cup skim milk
Preheat oven to 400 degrees
Spray muffin tin with non stick cooking spray.
Mix all dry ingredients, Add the apples and stir. Pour in milk and egg white's. Mix all together being careful not to over mix. Divide evenly into all muffin cups, and bake for 17-19 mins. Until tooth pick comes out clean. I've noticed that if I add to many apples and if I not remove the muffin's from the tin's right away the bottom's could be kind of soggy. I shut my oven off. put my muffin's on a cooling rack and return to the oven for 3-4 mins. This helps get rid of the problem.
