Cardamom Tea Cookies

1 cup Butter, unsalted1 Egg Yolk2/3 cup Granulated Sugar1/2 tsp cardamom1/4 tsp salt1/4 tsp Baking soda2 cups all purpose white flour1/4 cup Granulated Sugar for dipping in...won't use all of it, but the whole amount is factored into the calories!
Let the butter and egg yolk stand at room temperature for 30 minutes.
In large bowl, beat butter with mixer on medium to high for 30 seconds. Add 2/3 cup sugar and beat about 5 minutes...until completely mixed and fluffy. Add egg yolk, cardamom, baking soda, and salt. Beat until combined. Beat in as much flour as you can, stirring by hand if you need to.
Cover and refrigerate dough about one hour.
Roll dough into 1" balls and place 2" apart on ungreased cookie sheets. Bake at 350 degrees for 8-10 minutes....just until bottom starts to brown. Let rest on sheet out of oven at least 1 minute before transfering to cooling rack.
Dip cookies in sugar and enjoy!
