Baked Oatmeal Muffins made in a Blender

Ingredients
Banana, 3 medium over-ripe3 eggs -large1 TBSP Honey/agave or sweetner(optional)1/4 tsp saltOatmeal 1 1/2 cupsDried Cranberries - handful (about 1/3 c)Walnut pieces - handful- (about 1/3 cup)cinnamon to taste (1/2 tsp)Baking Soda 1 tsp 1TBS raw sugar or granulated
Directions
1. Place bananas, eggs, salt and sweetner in Blender. Mix until broken up and fairly smooth.

2. Add rest of ingredients, mix or pulse on and off until just combined. Scraping sides if needed. Do not over mix.

Pour into a muffin pan that has been sprayed with Pam.
Sprinkle sugar on the top.

Bake approx. 16-20 minutes

4 muffins = 1 serving oatmeal, 1 banana, and 1 egg
