Cashew Brittle (Microwave)

Ingredients
1 Cup Granulated Sugar1/2 Cup Karo Light Corn SyrupDash (1/16 t) Salt1 1/2 cups (apx 7.5 oz) Cashews1 Tablespoon Butter1 1/2 Teaspoons Baking Soda1 Teaspoon (liberal) Vanilla Extract (not imitation)
Directions
Liberally grease large cookie sheet; set aside

In a small container combine baking soda & vanilla; set aside.

In a large flat-bottom microwave proof casserole dish
Combine sugar, syrup, salt and nuts. Mix to combine
COOK ON HIGH FOR 3 MINUTES; stir and return to microwave; COOK ON HIGH FOR 3 MINUTES;
stir, return to microwave; COOK ON HIGH FOR 2 MINUTES (for a total cooking time of 8 minutes).

Remove from microwave and immediately stir in butter and soda/vanilla mixture, stiring until combined and fluffy. Quickly pour mixture onto greased cookie sheet. Let set at room temperature until hard; crack into pieces and ENJOY.
