Smoke and Fire Chipotle Salsa

1 can (14.5oz) of diced tomatoes, seasoned with green chilies or jalapenos1 large onion, roughly chopped4-8 cloves of fresh garlic, according to preference1-2 limes, juiced.Fresh Cilantro, about a loose handful of leaves, or according to taste1 can Chipotles in Adobo Sauce (found in mexican food aisle.)SaltPepper(see notes about adding jalapenos.)
Using a food processor or blender, combine can of tomatoes, chopped onion, garlic, limes and cilantro. Add 1 TBSP of salt freshly cracked pepper, pulse, and taste. Add more seasoning if desired. You could stop here (add jalepeno, see notes.) and have a fantastic salsa!
For the smokey and hot flavor, open up your can of chipotles and add one at a time to the processor until you get the heat and flavor you like. Sample as you go, very important! When you think you are close, add 1/4 of a chipotle at a time. I add about half a can to mine, but that makes it HOTHOTHOT. You can chill overnight for a nice marinated flavor, or serve immediately! It will last for about 4-5 days, or until it doesn't smell fresh anymore. Keep in mind you are working with fresh ingredients.
Serving Size: about 2 1/2 cups
