Ingredients
8 oz. wild rice (2 C.)2 T pine nuts.5 C sun dried tomatoes, drained/chopped.5 C black olives, sliced.5 C marinated artichoke hearts, drained2 T rice vinegarsalt, pepper, parsley to taste
Directions
Cook rice according to package directions. Toast pine nuts lightly in a dry skillet. Combine rice, nuts, and remaining ingredients and toss well.

    This was a great dish! Could be eaten hot or cold. I added .5 cup chickpeas (garbanzo beans) for some added protein. A serving of this is VERY filling! - 9/1/12
