Low Calorie Turkey Chili

Ingredients
1-2 Tbl Oil (Olive or Veg)1 large Onion, diced or grated1 lb Ground Turkey Breast2 large Zucchini, diced or grated1-2 large Carrot, diced or grated2 cans of low sodium beans (black and/or pinto), drained16 oz. Frozen Sweet Corn1 large can of Crushed Tomatoes1 large can Petite Cut Diced Tomatoes6 Tbl Chili powder1/2 tsp Ground Cumin1/2 tsp Cayenne Pepper (optional)2 tsp Garlic powder1/2 tsp Dried Oregano, 2 tsp Salt (+/- to taste, but season as you go) 1/2 tsp Ground Black Pepper (+/-)3 Tbl Corn masa
Directions
- Heat Oil and add Onions and 1/4 tsp salt.
- Saute onions until they just start to soften
- Add ground turkey, 1/4 tsp salt and a bit of ground black pepper. Cook,breaking it up as it cooks, until done.
- If using a Crock Pot: Put cooked turkey mix and all other ingredients in slow cooker, stir, and put on high for 6-8 hours.

- If cooking on the stove cook the onions and turkey in a big pot. Once they have cooked add balance of ingredients and bring to a boil, stirring occasionally. Turn down to simmer and cook for __________ minutes (until done).
