Chocolate & Strawberry Stuffed French Toast

Ingredients
4 slices light wheat toast1 large egg white1/4 cup vanilla soy milk3 tbsp whipped cream cheese1 cup fresh strawberries, thinly sliced1/4 cup mini chocolate chips
Directions
beat egg white and milk in a small bowl. Lay our 4 slices of bread (crusts removed if preferred). Spread cream cheese evenly on slices. Pile strawberry slices on top of (2) slices (save some for garnish on top). Sprinkle chocolate chips on strawberries and top with 2nd slice of bread to make a sandwich. Dip sandwich into egg mixture coating both sides. Add to warm skillet and cook on both sides until golden. Mover to serving plate and sprinkle with remaining strawberries. Enjoy!

    I used egg beaters mixed with my FF blueberry crumble coffemate to dip the sandwiches in & sweetened the creamcheese with 1/2 T of sugar...eliminated the chocolate chips. . . .wish that there were leftovers. - 2/20/08
