Gluten-Free Mexican One-dish Dinner

White Rice, long grain, 3 cups dryGround beef, extra lean (93/7), 1 lbOnions, raw, 1 medium, dicedSweet peppers (bell), .75 cup, choppedGarlic, 3 tsp choppedDel Monte Petite Cut Diced Tomatoes, 2 cup (1 can)Chili powder, 1 tbspGround Cumin, 1.5 tspPepper, black, .5 tspSmoked Paprika, 1 tspPepper, red or cayenne, .5 tsp
Start the Rice in a rice cooker.
While the rice is cooking, brown the beef and vegetables except tomatoes. When the meat is done, add the tomatoes (with the juice in the can) and the spices. Let it simmer until the rice is done on low heat.
When the rice is done, mix it into the meat/veggie mixture.
Serve with cheese or sour cream for a tasty garnish. You could also add a salad if this was not quite enough for a whole meal by itself.
