Low Carb Pecan Chocolate Chip Power Muffins

Ingredients
12 ounces cream cheese, softened5 eggs2 teaspoons vanilla extract15 drops EZ Sweetz liquid sucrulose (or use Splenda)1-1/2 cups almond meal1 cup wheat bran2 teaspoons cinnamon1 teaspoon baking powder1/2 cup chopped pecans1/2 cup sugar-free chocolate chips
Directions
Preheat oven to 325 F. Put muffin liners in 12 muffin cups.

Put cream cheese and two eggs in the bowl of an electric mixer. Beat with a flat beater until smooth. Add rest of eggs, one at a time, beating briefly after each. In another bowl, blend by hand the bran, almond meal, cinnamon and baking powder. On slow speed, add this to the egg mixture. When mixture is well blended, stir in the nuts and chips by hand.

Fill the muffin pans almost to the top. Bake muffins for about 20-25 minutes or until golden brown.

Serving Size: Makes 12 muffins.
