Mushroom Cabbage Galette

Dough: (Alternatively, use a pizza crust dough)*Active Dry Yeast, 1 tsp (remove)water, .25 cup Granulated Sugar, .5 tsp (remove)Egg, fresh, .5 large (remove)*Flour, white, .85 cup (remove)Salt, 1 dash (remove)Olive Oil, 1.5 tbsp (remove)Filling:Onions, raw, 1 large (remove)Mushrooms, fresh, 250 grams (remove)Cabbage, napa, 500 grams (remove)Garlic, 2 cloves (remove)Thyme, ground, 1 tsp (remove)Tarragon, ground, 1 tsp (remove)Dill weed, dried, 1 tsp (remove)Water, tap, .25 cup (8 fl oz) (remove)Yogurt, plain, low fat, .25 cup (8 fl oz) (remove)Cider Vinegar, .5 tbsp (remove)Olive Oil, 1 tbsp (remove)Hard Boiled Egg, 1 large (remove)
Make the dough and let rise for one hour while you make the filling.
Finely chop the onions and garlic, slice the mushrooms, and chop the cabbage.
Saute the onions for 2 minutes, add the mushrooms and garlic, and saute for 10 minutes.
Add the chopped cabbage and water, cover and simmer for 10 minutes.
Uncover and tun the heat up to evaporate off the water until it has mostly disappeared.
Add the chopped boiled egg, yogurt or quark, and vinegar.
Roll the dough out into a rough circle, anywhere from 9-11 inches in diameter, and place on a baking sheet.
Spread into the middel of a rolled out galette (or pizza) dough. Fold over the the edges to make a rough pie. Bake at 400 for 20-25 minutes.
