Leek and Broccoli Soup

Leeks, 2 cup (remove)Broccoli, fresh, 2 cup, chopped (remove)Milk, 1%, 2 cup (remove)Water, tap, 1.5 cup (8 fl oz) (remove)Salt, 1 tsp (remove)Olive Oil, 2 1tsp (remove)
Clean and wash the leeks well and chop.Wash and chop broccoli in pieces. Heat oil in nonstick pan and stir fry garlic until fragrant. Add leeks and fry until soft. Add broccoli stir and add 1 cup of water. Cover and cook until broccoli is soft but not mushy.
Blend the whole thing in a blender until smooth. Add water and milk as needed to blend. Transfer it to the pan add salt and remaining water and milk. Bring it to a simmer. Add some black pepper to your taste and serve it with a crusty bread.
