Gluten Free Peanut Butter Cookies

Ingredients
1 c. peanut butter, smooth1 c. brown sugar, packed1 egg1 t. vanilla
Directions
Preheat oven to 350 degrees.
Combine peanut butter, brown sugar, egg, and vanilla.
Drop by teaspoonfuls onto greased cookie sheet.
Using a fork, make a criss-cross pattern on each cookie.
Bake for 10-11 minutes or until slightly puffy and brown.
Let cool on sheet for 5 minutes, then transfer to cooling rack.
