Zucchini Relish

Ingredients
10 C. Ground or finely chopped Zucchini4 C. Ground or finely chopped Onion5Tbsp. Pure granulated salt.*Mix Zucchini, onions and salt in lg. bowl and let stand overnight.*Next day: Drain and rinse in cold water; drain again and put in a large kettle with remaining ingredients.2 1/4 C. White Vinegar4 1/2 C. Sugar1 Tbsp. each of Nutmeg, Dry Mustard, Turmeric, and Cornstarch1/2 tsp. Pepper2 tsp. Celery Salt1 each Sweet Green Pepper and Red Pepper Chopped fine.
Directions
Bring to a boil and simmer uncovered. Stirring occasionally, 30 min. or until desired consistancy. Pour into 7 hot sterilized pint jars and seal. Process inhot water bath for 5 min. *** I dont Can this I just do a half or less recipe and then store it in a quart jar in my fridge...because of the vinegar it lasts just fine. Then when I run out I just do it again. MMMM its sooo good on a hot dog, hamburger (per my husband) or in tartar sauce!!!

    This is sooo good! My mother-in-law has pretty much the same recipe but her's calls for 6 cups of sugar. I did not miss the extra 1 1/2 cup! Thanks for the recipe! - 7/12/10
