Hummus / Houmous (no oil)

Ingredients
1 can chickpeas, drained2 cloves garlic3-4 Tbsp water3-4 Tbsp tahini3-5 Tbsp lemon juice1/2 tsp saltPinch of cumin (optional)
Directions
Makes 4 ample servings as a snack, dip or accompaniment to falafel

1. Start off with the lower amounts of water, tahini and lemon juice.
2. Add all ingredients to a food processor or blender and process until smooth. Add more water as necessary for texture.
3. Taste, and if needed, add more tahini and/or lemon juice to taste.
4. Refrigerate for up to 1 week.

    This was really nice. Couldn't get hold of the tahini, so added some more lemon juice, cumin and some chilli flakes. Had trouble blending it smooth in my liquidiser- maybe next time I need to blend it in batches. Very nice on sweet potato! - 8/5/12
