Chana Palak (Chickpea & Spinach Curry) QUICK & EASY!!

Ingredients
Directions
oil for pan (calculated using 1 tbsp sunflower oil)1 medium onion, diced6 cloves garlic, pressed2 15oz cans chickpeas (or equivalent cooked from dry)1 red pepper, diced4-6 tbsp curry powder (or to taste - I think mine is mostly mild tumeric hence using so much)1 tsp ground cayenne pepper (or to taste - the spiceyness of your curry powder will affect this)1 regular sized can of crushed tomatoes or diced tomatoes4 cups fresh baby spinach3/4 cup plain low fat yogurt
heat the oil in a large wok and stir fry the onion until golden and transluscent
Add Garlic, Chickpeas, Red Pepper, Curry Powder, Cayenne Pepper and mix well, heating through
Add can of tomatoes and let simmer for a couple of minutes until everything is heated
Add spinach until just wilted
Remove from heat and stir in yogurt - this finishes the sauce
Serve with Brown Rice or Quinoa, or in pitas, or in a bowl by itself!
