2 c. shredded cheddar 2 c. shredded low fat cheddar ⅓ c. minced parsley 1-1/4 c. coarsely chopped walnuts 4 eggs, lightly beaten 1-1/4 c. cooked brown rice 1 med. onion, chopped 1 c. coarsely chopped mushrooms or green pepper1 clove garlic, mincedButter, Smart Balance or cooking spray
Lightly beat eggs.
Mix all ingredients.
Line 9"x5" rectangular baking pan/dish with baking parchment.
Spray parchment with cooking spray or grease with butter/smart balance.
Pour mixture into pan.
Bake for 1 hour - crust should be nicely browned and crisp on edges.
Let stand for 10 minutes. Unmold onto a plate for cutting.
