Stained glass veggie casserole

Ingredients
2 medium beets (280g)3 medium carrots (280g)1 medium-large sweet potato (280g)
Directions
Grate the vegetables with a food processor or box grater. Layer in a medium-sized covered casserole dish, with the sweet potatoes on the bottom and the carrots on top.

Bake for an hour (or until all veggies are soft) in a 300-degree oven.
