Crab Fettucini

Ingredients
1 c. 1 % milk, or low fat cream1/4 c. butter1 pkg. (8 oz.) crab flakes or chunks (you can substitute imitation crab meat)1/8 tsp. black pepper1/2 c. Parmesan cheese2 cloves garlic, finely chopped6 oz. fettucini
Directions
Cook fettucini according to label. Heat butter and garlic in a deep frying pan on medium heat until garlic is lightly browned. Add cream, crab and pepper to the garlic butter. Heat for about 3 minutes or until mixture just starts bubbling, stirring occasionally. Add Parmesan cheese stirring for 1 minute and then remove from heat. Mix crab sauce with fettucini. Serve immediately with additional Parmesan cheese (optional). Makes 4 (1 cup) servings.

    I loved this and I will definitely make it again. I used light olive oil instead of butter and whole raw milk (which I'm guessing is like half and half?) instead of low fat cream -- so the calories were prob. rotten -- but it's what I had on hand. Next time I'll make sure to use 1% milk. - 6/3/08
