Beth's Persimmon Salsa

Ingredients
1 Persimmon, diced1 Jalapeno pepper, diced1/4 red onion, diced3 cloves garlic, diced2 tbsp olive oil, more or less to taste and consistency1/4 oz lime juice, more or less to taste and consistencypinch of saltblack pepper to tastecilantro to taste
Directions
Dice the persimmon, jalapeno, onion, and garlic. Place in a glass bowl and add olive oil, lime juice, salt, pepper and cilantro to taste. Cover and let stand in the fridge for at least 1 hour, but the longer the better the flavor!
