Andrea's Chourico Hash

Ingredients
1 c. chopped green peppers1 c. chopped onion1 T. olive oil8 oz. Gaspars Mild Chourico, diced small1 bag of Steam in Bag Yukon Gold Potatoes (about 18.4 oz.), cooked, cooled and diced
Directions
Add olive oil and chourico into a pan on medium heat. Cook for 5 minutes, allowing the chourico fat to render out. Add the onions and peppers, cooking til tender, about 5 minutes. Add the cold diced potatoes and continue to cook until warmed through and crusty on the outside, about 10 minutes.
