Chicken Scarpiella

Ingredients
4 italian sausage cut into 1" slices 1 maui sweet onion, cut into strips2 cups green bell peppers, cut into strips1 cup red bell pepper, cut into strips1 pound red-skinned (or gold) potatoes, cubed2 jalapenos w/ seeds removed4 cloves garlic, minced1 tablespoon olive oil salt, pepper, oregano, basil to taste2 boneless skinless chicken breasts cut into 1" cubes1/2 cup chicken broth
Directions
1. Preheat to 400 degree.

2. Combine sausage, onion, peppers, potatoes, and garlic in oven dish. Add olive oil and toss together. Season. Place on bottom rack.

3. After the 1st dish has been in the oven for 10 min start the second dish. In a second oven safe container, combine chicken and broth. Season to taste. Bake both for 30 more minutes.

3. Add chicken to veggies and sausage. Cook for 5 to 10 minutes. Chicken tempurate should be 170 degree.

    This was very good! Fiance said I should make it again. I used rosemary garlic seasoning on the veggie mixture, and oregano and basil on the chicken. Left out the jalapenos also, but added crushed red pepper for a little heat. - 5/30/08

    I broke this down into 5 servings instead of 4 and it was still enough. I didn't use jalapenos though, too much heat. - 2/17/08
